Birra Rustica is a an old-style Bavarian beer made with 100% Maple Smoked Connecticut Barley - grown, smoked & malted locally by Thrall Famly Malt in Windsor. During the brewday, we attempted an approximation of another traditional Bavarian brewing method: decoction. This is where a portion of the mash (a porridge of hot water + crushed malt) is removed, heated to a boil, then returned to the mash. This has the effect of increasing the temperature of the Mash and toasting the grain causing maillard (browning) reactions that add depth of flavor and some caramelization that contributes sweetness to the finished beer.
