Larger breweries have the opportunity to smell and select particular hops from a given crop year. Since we are tiny, we take the more practical approach of brewing a relatively light and neutral flavored beer and dosing them with hops from the latest crop. This let’s us evaluate the flavors and aromas of those hops even though we can’t afford to fly out to Yakima Valley to evaluate the harvest in person.
