Prova #19

People have asked us for 3 beers since we opened:

  1. Barrel Aged Imperial Stout
  2. Imperial IPA
  3. Sours

In the past we partnered with New England Brewing Co. to bring you a barrel aged stout but the new Connecticut rules prohibit that (we can’t sell other breweries beer anymore).

We do have an Imperial IPA on the schedule.

So it was only a matter of time before the people got the sour they’ve been clammoring for!

Well, let’s not jump to conclusions. The people got a sour, time will tell if it is one they’ll actually like. Because, as usual, we didn’t follow the conventional template. This beer is sour, but not kettle-soured like most modern American sour beers. It does not use spontanous fermentation like traditional Belgian brewers or even innoculation of a mixed (yeast & bacteria) culture like brewers making modern Belgian-style sours.

Instead, we rely on a happenstance of nature that produces lactic tartness in a way that better fits into our regular process. If you are curious, ask James what we did.

Oh and this is a very small batch b/c this novel method was unfamiliar to us and we didn’t know just how sour it would get. So here’s your chance to shape the future of our modern American sour beer program. Let us know what you think.
